How to Make Roasted Broccoli & Hummus

Putting this dish together is simple.Start by roasting the broccoli in the oven. I like to use tenderstem broccoli – also called broccolini. You can use broccoli florets, if you want. It’ll taste the same in the end. I just think the presentation is better with the tenderstem. Crank the oven temp up to 425 degrees F to get nice charred florets.You can use roasted cauliflower for this recipe too!Meanwhile, add some hummus to the plate. When the broccoli is done, add it to the top of the hummus. Finally, sprinkle with za’atar and top with slivered almonds or other seeds and nuts, a sprinkle of paprika and a squeeze of fresh lemon juice.

Ingredients

  • 1/2 lb tenderstem broccoli
  • 1 tbsp olive oil
  • 1/2 cup prepared hummus
  • 2 tbsp slivered almonds
  • 1 tsp za'atar seasoning
  • dash paprika
  • 2 lemon wedges
  • salt & pepper to taste

Instructions

  • Arrange broccoli on a lined baking sheet. Drizzle with olive oil and a sprinkle of salt and pepper. Roast in the oven at 425 degrees F for 10 minutes or until the florets begin to char. Remove and set aside.
  • Add hummus to the plate. Add the broccoli on top. Drizzle with olive oil. Sprinkle on the za'atar, paprika, and slivered almonds. Finish with a spritz of lemon juice.
