- Sauerkraut – Make your own or use a store brand, like Hengstenberg, Nathan’s or Bubbies.
- Swiss Cheese – Great for its creamy and nutty taste; Gruyere can be substituted if you don’t have Swiss cheese.
- Mozzarella Cheese – Perfect for pizza due to its mild and melty taste.
- Corned Beef – You can make the corned beef yourself. It’s a brined brisket, essentially. Or you can buy a premade corned beef or substitute with pastrami for a slightly different flavor.
- Thousand Island Dressing – You can make your own or use a store-bought brand. See below for our recipe.
- Dill Pickles – I know it sounds strange, but it’s really tasty.
- Caraway Seeds – I love the flavor these add but some people have an aversion to this taste. Leave it off if you do.

- For a crispy crust, pre-bake it for a few minutes before adding toppings. Don’t forget to drain the sauerkraut well to prevent the pizza from becoming too soggy.
- Get creative with toppings by adding sliced onions, bell peppers, or even a drizzle of spicy mustard for extra flavor dimension. Add a sprinkle of chopped fresh parsley or green onions on top after baking for a pop of color and freshness.

How to Make Thousand Island Dressing
If you want to make your own Thousand Island dressing, it’s very easy and you likely already have the ingredients on hand. Here is our recipe:
- 1/3 cup mayo
- 1 tablespoon ketchup
- 1 tablespoon dill pickle relish
- 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Mix all the ingredients together in a bowl.

Savory Reuben Pizza
Ingredients
- 1 pre-made pizza crust I use Trader Joe’s or Whole Foods
- 1/2 cup (71 g) sauerkraut drained
- 1 cup (108 g) Swiss cheese shredded
- 1/2 cup (56 g) Mozzarella cheese shredded
- 1 cup (113 g) diced corned beef
- 1/4 cup (36 g) chopped dill pickles
- 1 tablespoon (6 g) caraway seeds
For homemade Thousand Island dressing:
- 1/3 cup (79 ml) mayo
- 1 tablespoon (15 ml) ketchup
- 1 tablespoon (15 g) dill pickle relish
- 1/2 teaspoon (3 g) garlic salt
- 1/2 teaspoon (1 g) ground black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- Place the pizza crust on a pizza sheet or stone.
- Mix the Thousand Island dressing ingredients in a bowl.
- Spread half the dressing evenly over the pizza crust.
- Sprinkle on the sauerkraut and the Swiss cheese.
- Evenly distribute the corned beef over the pizza.
- Sprinkle on the chopped dill pickles and caraway seeds. Top with mozzarella cheese.
- Place the pizza in the preheated oven near the bottom and bake for 15 minutes or until the cheese is melted and bubbly and the crust is golden brown.
- Remove the pizza from the oven and let it cool for a few minutes. Drizzle on the remaining sauce. Slice and serve.
