Savory Reuben Pizza

Reuben Pizza is a fusion of classic Reuben sandwich flavors atop a crispy pizza crust made with pre-made pizza crust, sauerkraut and Swiss cheese.

Equipment

Ingredients

  • 1 pre-made pizza crust I use Trader Joe’s or Whole Foods
  • 1/2 cup sauerkraut drained
  • 1 cup Swiss cheese shredded
  • 1/2 cup Mozzarella cheese shredded
  • 1 cup diced corned beef
  • 1/4 cup chopped dill pickles
  • 1 tablespoon caraway seeds

For homemade Thousand Island dressing:

  • 1/3 cup mayo
  • 1 tablespoon ketchup
  • 1 tablespoon dill pickle relish
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat the oven to 425°F (220°C).
  • Place the pizza crust on a pizza sheet or stone.
  • Mix the Thousand Island dressing ingredients in a bowl.
  • Spread half the dressing evenly over the pizza crust.
  • Sprinkle on the sauerkraut and the Swiss cheese.
  • Evenly distribute the corned beef over the pizza.
  • Sprinkle on the chopped dill pickles and caraway seeds. Top with mozzarella cheese.
  • Place the pizza in the preheated oven near the bottom and bake for 15 minutes or until the cheese is melted and bubbly and the crust is golden brown.
  • Remove the pizza from the oven and let it cool for a few minutes. Drizzle on the remaining sauce. Slice and serve.

Notes

  • For a crispy crust, pre-bake it for a few minutes before adding toppings. Don't forget to drain the sauerkraut well to prevent the pizza from becoming too soggy.
  • Get creative with toppings by adding sliced onions, bell peppers, or even a drizzle of spicy mustard for extra flavor dimension. Add a sprinkle of chopped fresh parsley or green onions on top after baking for a pop of color and freshness.
  • Consider making mini Reuben pizzas using individual-sized crusts for a fun and customizable dinner option.
