These homemade, Festive 4th of July Brownie Ice Cream Sandwiches will be the hit of the party this year. Ice cream sandwiched between a brownie with red, white, and blue sprinkles, it’s the perfect dessert to celebrate the holiday.

If you have an ice cream maker, what better way to use that homemade ice cream than in these delicious brownie sandwiches? Ice cream is fun to eat it on it’s own at a backyard party, but these ice cream sandwiches are even better.

The great thing is that you can put any flavor of ice cream into these brownie sandwiches. As long as the flavors go together, you’ve got a really tasty treat that can be changed up however you want.

While vanilla is probably still our favorite, we’ve stuffed these with strawberry ice cream, chocolate chocolate chip, Malted Moo, and even peaches and cream! Then roll them in any festive sprinkles you want.

Ingredients You’ll Need

These brownie sandwiches are very easy to make, especially if you buy brownies and ice cream. You can put as much homemade effort into them as you want. You can make your own brownies and ice cream from scratch or you can make box brownies and buy your ice cream.

  • Brownies – Boxed or homemade – you can even use store-bought baked brownies or blondies.
  • Ice cream – Any flavor you like! See our favorites for inspiration.
  • Red, white, and blue sprinkles – It’s pretty easy to find festive sprinkles at the store during the 4th of July season. You can also order them online. Here are some from Amazon that we like.

What Sprinkles to Use

We used a simple jar of red, white, and blue sprinkles that we found at our local grocery store. One small bottle covered about 8 brownies. If you can find a bigger jar or bag, like this one from Amazon, you will have enough to cover all 16.

How to Make Festive 4th of July Brownie Ice Cream Sandwiches

If you’re making them at home, bake and cool the brownies completely. Once cooled completely, cut them into 16 squares.

You’ll need to slice the brownies in half through the middle to create a top and bottom piece for your sandwiches. This is easiest when the brownies are slightly frozen, so you might place them in the freezer for 10 minutes before slicing. You don’t want them to be completely frozen so don’t leave them in there for too long!

We’ve found that the easiest way to cut the ice cream is to slice through the carton. Lay the carton on its side and cut 1” thick slices, then remove the cardboard ring from the outside. Cut the ice cream to fit the brownie square. We usually can get two pieces per slice, but this depends on what size of ice cream you bought.

If you can’t cut the carton, scoop out and flatten a piece of ice cream the size of your brownie and place it between the two brownie pieces. If you want them to look uniform, you can cut each side of the brownie to square off the ice cream.

Making Brownie Ice Cream Sandwich

If the ice cream is still firm, you can roll them in the sprinkles now, then put the sandwiches in the freezer and freeze until firm before serving. This usually takes about 15 minutes to an hour.

If the ice cream is already melting, freeze them first, then roll them in the sprinkles when you’re ready to serve them. You can even let the kids roll them in the sprinkles themselves for a little added fun.

Notes & Suggestions

  • You can make your brownies from scratch or from a box. Use whatever recipe or brand you like most. Here is a recipe we use for making them from scratch.
  • You can use any flavor of ice cream you like, or mix and match! I really like chocolate, strawberry, vanilla, or cookies and cream.
  • You can dress these up with sprinkles for any occasion, not just 4th of July. They make a fun snack for parties and get togethers. Try them for St. Patrick’s Day or Halloween!
  • You can cut the brownies into any size you want, but I find that cooking the brownies in an 8×8″ pan will give you 16 brownie sandwiches that aren’t too big or too much to eat. Remember that brownies are already really rich. If you make them bigger, they can be hard to get through.

How to Store Ice Cream Sandwiches

Wrap each of the individual sandwiches in plastic wrap and put them in the freezer until you’re ready to enjoy them. This way, you can pull out just one or two whenever you want. They’ll last in the freezer for up to a month.

If you’re planning to leave them there for a month or longer, wrap them in tin foil as well, so they don’t get freezer burned.

Can I Use a Different Type of Cookie?

You don’t have to use a brownie to make ice cream sandwiches. You can use any type of cookie you like. We’ve made these with sugar cookies, chocolate chip, snickerdoodles, and blondies. You just want to make sure the cookie is soft enough and doesn’t get super hard when frozen, or they will be hard to eat.

Ingredients

  • 4-6 ounces (113.4 g) festive sprinkles
