Chicken Bacon Ranch Casserole
Ingredients
- 8 ounces (227 g) rotini or penne pasta
- 3 strips bacon chopped
- 3/4 pound (340 g) chicken thighs chopped
- 1/4 cup (40 g) onion chopped
- 1 clove garlic minced
- 1 cup (237 ml) chicken broth
- 3 ounces (85 g) cream cheese softened
- 1/2 cup (118 ml) heavy cream
- 2 tablespoons (30 g) Ranch dry seasoning
- 1 cup (113 g) shredded cheddar cheese
- 1 green onion chopped
Instructions
- In a pot of salted water, cook the pasta for a minute or 2 less than the package instructions.
- Preheat oven to 375°F(190°C). Grease an 8×8” baking dish.
- In a skillet over medium heat, add the bacon and cook until crispy. Transfer the bacon out of the pot.
- Add the chicken and onion. Saute for 5 minutes. Add the garlic and saute for 30 seconds.
- Pour in the broth and deglaze the bottom of the skillet to remove all the browned bits.
- Stir in the cream cheese, heavy cream, and Ranch seasoning until creamy.
- Mix in the chicken mixture, cooked rotini, half of the crumbled bacon, and half of the cheese.
- Top the casserole with the remaining cheese. Bake for 25 minutes.
- Serve with remaining bacon crumbles and green onions on top.
