- 8 ounces rotini or penne pasta
- 3 strips bacon chopped
- 3/4 pound chicken thighs chopped
- 1/4 cup onion chopped
- 1 clove garlic minced
- 1 cup chicken broth
- 3 ounces cream cheese softened
- 1/2 cup heavy cream
- 2 tablespoons Ranch dry seasoning
- 1 cup shredded cheddar cheese
- 1 green onion chopped
In a pot of salted water, cook the pasta for a minute or 2 less than the package instructions.
Preheat oven to 375°F(190°C). Grease an 8x8” baking dish.
In a skillet over medium heat, add the bacon and cook until crispy. Transfer the bacon out of the pot.
Add the chicken and onion. Saute for 5 minutes. Add the garlic and saute for 30 seconds.
Pour in the broth and deglaze the bottom of the skillet to remove all the browned bits.
Stir in the cream cheese, heavy cream, and Ranch seasoning until creamy.
Mix in the chicken mixture, cooked rotini, half of the crumbled bacon, and half of the cheese.
Top the casserole with the remaining cheese. Bake for 25 minutes.
Serve with remaining bacon crumbles and green onions on top.
