The combination of smoky heat and creamy, cheesy buffalo chicken filling makes these Buffalo Chicken Poppers a perfect appetizer!

We’re using jalapenos from our garden, because there are dozens of them. We remove most of the seeds and white pith, which leaves them with just a tiny bite of heat and great flavor, because a lot of our friends don’t like spicy foods, but you can use mini sweet peppers as well.

Ingredients

  • 12 jalapeno peppers cut in half lengthwise and seeded
  • 1 cup (140 g) shredded chicken breast
  • 4 ounces (113 g) cream cheese softened
  • 1/2 cup (57 g) shredded cheddar cheese divided
  • 4 tablespoons (59 ml) Frank’s Buffalo Wing Sauce divided
  • 1/4 teaspoon (2 g) salt
  • 1/4 cup (59 ml) blue cheese dressing optional

Instructions

  • Preheat the oven to 400° F (200° C).
  • In a bowl, combine the shredded chicken, cream cheese, half the cheddar cheese, half the buffalo wing sauce, and the salt. Stir to combine.
  • Stuffed the peppers evenly with the filling. Top with the remaining cheddar cheese. Bake for 15 minutes, until the cheese has melted and is bubbly on top.
  • Drizzle on the remaining buffalo sauce and blue cheese dressing (or serve the blue cheese dressing as a dip on the side).
