Buffalo Chicken Poppers

- 12 jalapeno peppers cut in half lengthwise and seeded
- 1 cup shredded chicken breast
- 4 ounces cream cheese softened
- 1/2 cup shredded cheddar cheese divided
- 4 tablespoons Frank's Buffalo Wing Sauce divided
- 1/4 teaspoon salt
- 1/4 cup blue cheese dressing optional
Preheat the oven to 400° F (200° C).
In a bowl, combine the shredded chicken, cream cheese, half the cheddar cheese, half the buffalo wing sauce, and the salt. Stir to combine.
Stuffed the peppers evenly with the filling. Top with the remaining cheddar cheese. Bake for 15 minutes, until the cheese has melted and is bubbly on top.
Drizzle on the remaining buffalo sauce and blue cheese dressing (or serve the blue cheese dressing as a dip on the side).
- If you want milder poppers, use mini sweet peppers instead of jalapeños. To turn up the heat, leave some of the seeds in.
- You can assemble the poppers a few hours in advance and bake them when you’re ready. This is great for making them in batches, so they're always served fresh and hot.
- For a crunchy twist, sprinkle a little panko breadcrumb topping on the cheese before baking or add some bacon pieces.
