Buffalo Chicken Poppers

The combination of smoky heat and creamy, cheesy buffalo chicken filling makes these Buffalo Chicken Poppers a perfect appetizer!

Ingredients

  • 12 jalapeno peppers cut in half lengthwise and seeded
  • 1 cup shredded chicken breast
  • 4 ounces cream cheese softened
  • 1/2 cup shredded cheddar cheese divided
  • 4 tablespoons Frank's Buffalo Wing Sauce divided
  • 1/4 teaspoon salt
  • 1/4 cup blue cheese dressing optional

Instructions

  • Preheat the oven to 400° F (200° C).
  • In a bowl, combine the shredded chicken, cream cheese, half the cheddar cheese, half the buffalo wing sauce, and the salt. Stir to combine.
  • Stuffed the peppers evenly with the filling. Top with the remaining cheddar cheese. Bake for 15 minutes, until the cheese has melted and is bubbly on top.
  • Drizzle on the remaining buffalo sauce and blue cheese dressing (or serve the blue cheese dressing as a dip on the side).

Notes

  • If you want milder poppers, use mini sweet peppers instead of jalapeños. To turn up the heat, leave some of the seeds in.
  • You can assemble the poppers a few hours in advance and bake them when you’re ready. This is great for making them in batches, so they're always served fresh and hot.
  • For a crunchy twist, sprinkle a little panko breadcrumb topping on the cheese before baking or add some bacon pieces.
