This Bacon Cabbage Gratin is rich, savory comfort food that comes together with just a few simple ingredients. Crisp bacon, tender cabbage, and a creamy sauce bake into a golden, bubbly dish that’s both hearty and satisfying.

If you’re looking to use up a head of cabbage, this cozy side dish delivers big flavor with minimal effort.
Helpful Tips
- Flip the cabbage wedges carefully. The cabbage will start to soften as it cooks and some of the leaves can separate.
- Cook the bacon until just crisp—overcooked bacon can turn tough when baked.
- Let the gratin rest for 5–10 minutes after baking to help it set and make serving easier.

Bacon Cabbage Gratin
Ingredients
- 1/2 head cabbage cut into 4 wedges
- 4 slices bacon chopped
- 1/2 cup heavy cream
- Salt and pepper to season
- 1 cup Parmesan cheese grated
- 3 sprigs fresh thyme
Instructions
- Preheat the oven to 400°F(200°C).
- Cut the cabbage in half, then into 4 wedges each, about 1 1/2 inches thick, keeping the core intact.
- Add chopped bacon to an oven-safe skillet over medium heat. Cook until just slightly crispy. Remove from the pan and set aside.
- Arrange the cabbage wedges in the hot bacon grease in the skillet. Sear for about 5 minutes, then flip and cook another 5 minutes. Both sides should develop nice golden brown color. If there’s a lot of bacon grease remaining in the pan, remove it before proceeding.
- Pour the heavy cream over the cabbage. Season with salt and pepper. Sprinkle the bacon pieces over the top. Sprinkle on the Parmesan cheese. Then add the thyme sprigs.
- Bake the cabbage for 20 minutes, until fork tender and the cream is thick and bubbly.
