- 1/2 head cabbage cut into 4 wedges
- 4 slices bacon chopped
- 1/2 cup heavy cream
- Salt and pepper to season
- 1 cup Parmesan cheese grated
- 3 sprigs fresh thyme
Preheat the oven to 400°F(200°C).
Cut the cabbage in half, then into 4 wedges each, about 1 1/2 inches thick, keeping the core intact.
Add chopped bacon to an oven-safe skillet over medium heat. Cook until just slightly crispy. Remove from the pan and set aside.
Arrange the cabbage wedges in the hot bacon grease in the skillet. Sear for about 5 minutes, then flip and cook another 5 minutes. Both sides should develop nice golden brown color. If there’s a lot of bacon grease remaining in the pan, remove it before proceeding.
Pour the heavy cream over the cabbage. Season with salt and pepper. Sprinkle the bacon pieces over the top. Sprinkle on the Parmesan cheese. Then add the thyme sprigs.
Bake the cabbage for 20 minutes, until fork tender and the cream is thick and bubbly.
