- Green chilies – These chilis are not spicy, but add a lovely smokiness.
- Cheddar cheese – I like to use cheddar but you can use any grated cheese.
- Sour cream
- Salt & ground black pepper

- Use day old rice: Day old rice is dryer, which gives a better texture to the dish.
- Adjust the heat: The level of spiciness can be adjusted to your preference. For a milder dish, remove the seeds from the chilies or use a milder variety. If you prefer more heat, leave the seeds in or add an extra chili.
- Leftovers: When reheating leftovers, add a little broth or water to the rice to rehydrate it and make the rice creamy again.

Green Chili Rice
Ingredients
- 2 cups (316 g) cooked white rice
- 4 ounce (113 g) can diced mild green chiles
- 1/2 cup (57 g) cheddar cheese shredded and divided
- 8 ounces (227 g) sour cream
- 1/2 teaspoon (3 g) salt
- 1/4 teaspoon (0.5 g) ground black pepper
Instructions
- Preheat the oven to 350° F(175°C). Lightly grease an 8×8” baking dish.
- Combine all ingredients, reserving 1/2 cup of cheese, together in a large bowl. Spread the mixture into the prepared dish. Sprinkle remaining cheese on top.
- Bake for about 25 minutes, until the cheese is melted and golden.
Notes
