Green Chili Rice

Green Chili Rice is a vibrant and aromatic side dish that combines fluffy rice with the zesty flavors of green chilies, fresh herbs, and spices.

Ingredients

  • 2 cups cooked white rice
  • 4 ounce can diced mild green chiles
  • 1/2 cup cheddar cheese shredded and divided
  • 8 ounces sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Preheat the oven to 350° F(175°C). Lightly grease an 8x8” baking dish.
  • Combine all ingredients, reserving 1/2 cup of cheese, together in a large bowl. Spread the mixture into the prepared dish. Sprinkle remaining cheese on top.
  • Bake for about 25 minutes, until the cheese is melted and golden.

Notes

  • Use day old rice, it is dryer which gives a better texture to the dish.
  • The level of spiciness can be adjusted to your preference. For a milder dish, remove the seeds from the chilies or use a milder variety. If you prefer more heat, leave the seeds in or add an extra chili.
  • When reheating leftovers, add a little broth or water to the rice to rehydrate it and make the rice creamy again.
