- 2 cups cooked white rice
- 4 ounce can diced mild green chiles
- 1/2 cup cheddar cheese shredded and divided
- 8 ounces sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Preheat the oven to 350° F(175°C). Lightly grease an 8x8” baking dish.
Combine all ingredients, reserving 1/2 cup of cheese, together in a large bowl. Spread the mixture into the prepared dish. Sprinkle remaining cheese on top.
Bake for about 25 minutes, until the cheese is melted and golden.
- Use day old rice, it is dryer which gives a better texture to the dish.
- The level of spiciness can be adjusted to your preference. For a milder dish, remove the seeds from the chilies or use a milder variety. If you prefer more heat, leave the seeds in or add an extra chili.
- When reheating leftovers, add a little broth or water to the rice to rehydrate it and make the rice creamy again.
