Ingredients You Need

  • Cooked corned beef – This recipe assumes you already have cooked corned beef. You can also start by making your own. It’s quite easy with this recipe.
  • Avocado slices – Depending on the size of your avocado, you’ll need about 1/2 of an avocado.
  • Shredded cabbage – I like to shred both purple and green cabbage for the color. You can also use a coleslaw mix.
  • Diced red onion – Adds a little spiciness to the tacos. If you don’t like red onions, you can omit or use yellow onions.
  • Cilantro – Fresh cilantro adds a bit of the Mexican fusion to these tacos.
  • Thousand Island dressing – You can make your own (recipe below) or use store-bought dressing.

Ingredients

  • 6 small flour tortillas
  • 1/2 pound (227 g) corned beef cooked and shredded
  • 1/2 avocado sliced
  • 1/2 cup (35 g) shredded cabbage or coleslaw mix
  • 2 tablespoons (20 g) red onion diced
  • 2 tablespoons (1 g) fresh cilantro chopped
  • 2 tablespoons (32 g) Thousand Island dressing

Instructions

  • Warm the corned beef and tortillas in a skillet until they are warm.
  • Arrange the tortillas on a plate. Layer on the corned beef, a slice of avocado, cabbage, red onion, and cilantro. Drizzle on the Thousand Island dressing.
