Ingredients

  • 6 small flour tortillas
  • 1/2 pound corned beef cooked and shredded
  • 1/2 avocado sliced
  • 1/2 cup shredded cabbage or coleslaw mix
  • 2 tablespoons red onion diced
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons Thousand Island dressing

Instructions

  • Warm the corned beef and tortillas in a skillet until they are warm.
  • Arrange the tortillas on a plate. Layer on the corned beef, a slice of avocado, cabbage, red onion, and cilantro. Drizzle on the Thousand Island dressing.
  • Serve while warm.

Notes

  • Warming the tortillas makes them more pliable and enhances their flavor. A hot, dry skillet works best, but wrapping them in a damp cloth and microwaving for a few seconds is a quick alternative.
  • While it's tempting to load up each taco, a balanced ratio of corned beef to toppings ensures every bite is perfect.
  • Feel free to mix a bit of hot sauce into your Thousand Island dressing for an extra kick.
