Ingredients You’ll Need
- Potatoes – You can use Russet or Yukon Gold potatoes. Both have a high starch content that makes for crispy fries.
- Olive oil
- Greek seasoning – You can look for a store bought version or mix up your own using equal parts oregano, dill, garlic powder, onion powder, salt and black pepper.
- Feta cheese – Crumbled.
- Garnish – Parsley and finely chopped red onions.
- For the sauce: Greek Yogurt, dill, mayo, lemon juice, garlic and onion powders, salt
Helpful Tips
- Use starchy potatoes like Russets for the crispiest fries. Their high starch content helps achieve that perfect golden-brown exterior.
- You can choose your cooking method for the fries. I usually bake them but they don’t get as crispy as frying them. You can also use your air fryer.
- Eat your fries immediately after frying while they are still hot. They will fly off the plate.

Seasoned Greek Fries with Lemon Dill Sauce
Ingredients
- 4 medium Yukon gold potatoes 1 1/2 pounds
- 2 tablespoons (30 ml) olive oil
- 1 tablespoon (8 g) Greek seasoning equal parts oregano, dill, garlic and onion powder, salt and pepper
- 1/4 cup (38 g) feta cheese crumbled
- Parsley and red onion finely chopped, for garnish
For the sauce
- 1/4 cup Greek yogurt plain
- 1/4 cup mayonnaise
- 2 tablespoons fresh dill, chopped or 1 teaspoon dried dill
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon salt
- water, if necessary for thinning
Instructions
- Preheat the oven to 425°F (220°C). Prepare a baking sheet with parchment paper.
- Wash the potatoes. Leaving the skins on. Cut the potatoes into fries.
- Soak fries in cold water for 10 minutes.
- Drain the potatoes and dry them thoroughly with a paper towel.
- Add the fries to a bowl and toss them with the olive oil and Greek seasoning. Spread the fries out on the baking sheet so they aren’t touching.
- Bake for 20 minutes. Flip and continue cooking for 8 to 10 minutes until they are crisp and golden brown.
- Mix together the sauce ingredients in a bowl. Refrigerate as necessary until fries are done.
- Transfer fries to a platter and top with the feta cheese crumbles. Add parsley and red onion. Serve with lemon wedges and lemon dill sauce.
