Ingredients

  • 5 slices bacon
  • 3-4 romaine lettuce leaves chopped into 1 inch squares
  • 15 cherry tomatoes
  • 1/4 cup (59 ml) mayonnaise
  • 15 toothpicks or cocktail skewers

Instructions

  • Cook the bacon until it is cooked through and still pliable. If you cook it crispy it won’t fold properly.
  • Once the bacon has cooled completely, cut it into 3 pieces.
  • Cut the romaine leaves into 1 inch squares.
  • To assemble, spread some mayo on the bacon strip. Top with romaine lettuce and a cherry tomato.
  • Use a toothpick to go through one side of the bacon, through the tomato, and out the other side of the bacon.
  • Transfer the BLT bites to a serving platter.
