Mini BLT Party Bites
Ingredients
- 5 slices bacon
- 3-4 romaine lettuce leaves chopped into 1 inch squares
- 15 cherry tomatoes
- 1/4 cup (59 ml) mayonnaise
- 15 toothpicks or cocktail skewers
Instructions
- Cook the bacon until it is cooked through and still pliable. If you cook it crispy it won’t fold properly.
- Once the bacon has cooled completely, cut it into 3 pieces.
- Cut the romaine leaves into 1 inch squares.
- To assemble, spread some mayo on the bacon strip. Top with romaine lettuce and a cherry tomato.
- Use a toothpick to go through one side of the bacon, through the tomato, and out the other side of the bacon.
- Transfer the BLT bites to a serving platter.
