- 5 slices bacon
- 3-4 romaine lettuce leaves chopped into 1 inch squares
- 15 cherry tomatoes
- 1/4 cup mayonnaise
- 15 toothpicks or cocktail skewers
Cook the bacon until it is cooked through and still pliable. If you cook it crispy it won’t fold properly.
Once the bacon has cooled completely, cut it into 3 pieces.
Cut the romaine leaves into 1 inch squares.
To assemble, spread some mayo on the bacon strip. Top with romaine lettuce and a cherry tomato.
Use a toothpick to go through one side of the bacon, through the tomato, and out the other side of the bacon.
Transfer the BLT bites to a serving platter.
- Secure each mini BLT bite with a fun toothpick or cocktail skewer to make them easy to grab and enjoy without the mess.
- Cook the bacon through but stop before it gets crispy. It needs to bend and won't do that if it gets cooked too much.
- Try adding a little avocado, spicy mayo, or a sprinkle of cheese to elevate the flavor and give the classic BLT a fun twist!
