Ingredients

  • 1/2 pound ground lamb
  • 1/4 cup breadcrumbs
  • 2 tablespoons onion grated
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh mint chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon EACH salt and pepper
  • 12 mini pita or flatbread rounds
  • Additional fresh herbs for garnish

For the tzatziki

  • 1/2 cup Greek yogurt
  • 1/4 cucumber grated and squeezed dry
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh dill chopped
  • salt to taste

Instructions

  • Preheat the oven to 400°F(200°C). Line a baking sheet with parchment paper.
  • Combine the lamb, breadcrumbs, onion, garlic, parsley, mint, oregano, salt and pepper in a bowl. Mix well.
  • Form the mixture into 12 lightly-packed meatballs.
  • Spread the meatballs out on the baking sheet and bake for 18 minutes.
  • Mix all of the tzatziki ingredients in a bowl and chill until ready to serve.
  • Warm the pita rounds on a tray in the oven or in the microwave, until soft and warm.
  • To serve, place a meatball on each pita. Spoon on some tzatziki, and garnish with herbs.
