Ingredients
- 9 ounces refrigerated cheese tortellini
- 2 large eggs
- 1/4 cup flour
- 1/2 teaspoon EACH salt and pepper
- 1 cup panko breadcrumbs
- 1/4 cup parmesan cheese freshly grated
- 1/2 teaspoon garlic powder
- 1 cup marinara for dipping
Instructions
- Boil the tortellini in a large pot of water for about 2 minutes, just to blanch them. Drain and set on a paper towel lined plate to remove all excess water and cool.
- Preheat the oven to 400°F(200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a bowl, mix together the eggs, flour, salt and pepper until well blended.
- In another bowl, mix together the breadcrumbs, parmesan cheese, and garlic powder.
- You can do this all at once or one by one. Dip the tortellini in the egg mixture, then in the breadcrumb mixture and set it on the baking sheet, spaced apart so they aren’t touching.
- Spray lightly with cooking oil so they turn a nice golden brown as they cook.
- Bake for 18 minutes, flipping once, so they brown evenly. You can also cook these in the air fryer at 400°F for about 12-14 minutes.
- Serve with warm marinara on the side.
