Made with crispy rye bread, savory corned beef, tangy sauerkraut, and creamy Thousand Island dressing, these bite-sized snacks pack all the bold flavors of the original into a handheld treat. Whether you’re serving them for St. Patrick’s Day or just craving a comforting, cheesy bite, they’re guaranteed to disappear fast!

Helpful Tips
- Rye bread – Rye bread comes in a couple different flavors. I like to use the dill rye for this recipe.
- Drain the sauerkraut well – Excess moisture can make the bites too wet, so press out any liquid before adding.
- Sauce it up – Don’t be afraid to put a healthy dollop of Thousand Island Dressing on the top.

Easy Reuben Bites
Ingredients
- 3 slices rye bread cut into 6 pieces each
- 6 slices swiss cheese cut into 4 pieces each
- 6-8 slices corned beef, thinly sliced or sliced pastrami
- 1 cup (142 g) sauerkraut
- 1/2 cup (118 ml) thousand island dressing
Instructions
- Preheat the oven to 375°F(190°C). Line a baking sheet with parchment paper.
- Cut each slice of bread into 8 pieces. Cut the swiss cheese slices into 6 pieces each. Cut the corned beef slices into squares.
- Spread some Thousand Island Dressing onto the bread and place them on a baking sheet. Layer the cheese and corned beef on top. Finish with sauerkraut.
- Place the baking sheet in the oven and bake for 6-8 minutes, until the cheese is melted. Remove from oven.
- Top each with dollops of thousand island dressing and serve warm.
