Chocolate rice krispies treats

Chocolate rice krispies treats are a delightful variation of the classic Rice Krispies treats. They are made by combining Rice Krispies cereal with melted chocolate and marshmallows to create a delicious and indulgent treat. They can be enjoyed as a snack, dessert, or a fun treat for special occasions.

These treats store really well for up to a week, so they are great to make in advance. Especially if you are hosting a gathering as you could make them a day before for simplicity. We also love to make themed treats, like our Spider Web Rice Krispies Treats and Christmas Tree Rice Krispies Treats.

Another variation we love are these Peanut Butter Rice Krispies Bars. They don’t have marshmallows and are coated with a peanut butter and a butterscotch chocolate topping.

Ingredients Needed

ingredients for Chocolate rice krispies treats
  • Butter – I like to use salted butter to add a little savory note, but you can use unsalted if you wish.
  • Rice Krispie Cereal – You can use any brand of puffed rice cereal, though I prefer to use the branded version because I find it holds up better when storing the treats.
  • Semisweet Chocolate Chips – Use a brand of chocolate chips you like eating on their own. Taste does matter for the final product!
  • Mini Marshmallows – You can use normal-sized marshmallows if you prefer but I find the mini ones melt faster and easier.
  • Vanilla Extract – If you don’t have vanilla extract you don’t need to use it. It just adds an extra flavor profile.

How to Make Chocolate Rice Krispies Treats

Grease an 8×8-inch glass baking dish with cooking spray or butter. The smaller pan will make thicker squares.

A greased baking dish

In a large saucepan, melt the butter over low heat. Add the chocolate chips and stir until melted and smooth.

Add the mini marshmallows to the saucepan and stir again until melted and smooth. Don’t leave the pan at this stage or you might end up with burned marshmallow goo.

the melted marshmallow mixture in a pot

As soon as all of the marshmallows are melted, remove the saucepan from the heat and stir in the vanilla extract.

Add the Rice Krispies cereal to the saucepan and stir until well coated with the chocolate marshmallow mixture. Do this quickly, as the marshmallow will stiffen quickly.

stirring the mixture up in a sauce pan

Transfer the mixture to the greased baking dish and use a spatula to press it down evenly. If this isn’t easy to accomplish, you can lightly butter your hands and press with your hands instead. Just be careful as the mixture is quite hot.

Let the chocolate Rice Krispies treats cool and set at room temperature for at least 30 minutes. I know it’s hard to resist that delicious aroma.

Once cooled and set, cut the treats into squares and serve.

Additional Helpful Tips

  • When melting butter and chocolate, use low heat to prevent burning or overheating. Stir constantly to ensure even melting.
  • When incorporating cereal into the chocolate marshmallow mixture, use a gentle folding motion. Overmixing can crush the cereal and affect the texture.
  • Allow the treats to cool and set at room temperature or in the refrigerator before cutting into them. This ensures clean cuts and well-formed bars.
  • Press the mixture firmly and evenly into the dish to avoid uneven bars. You can do this with the back of a spoon or with your hands.
  • Use a sharp knife to cut the treats. Dip the knife in hot water and wipe it dry between cuts to prevent sticking.

How to Store

Place the chocolate Rice Krispies treats in an airtight container, ensuring that they are in a single layer or separated by parchment paper to prevent sticking. They can last like this for up to 5-7 days if you keep the container in a cool, dry place away from direct sunlight.

The Rice Krispies tend to become stale quickly, so the sooner you eat them the better.
