You’ll love this Italian Cornbread Skillet because it takes the comfort of classic cornbread and gives it a fun, savory twist with salami, mozzarella, and Italian seasoning baked right into every bite. This skillet bread turns everyday cornbread into a full-on Italian flavor bomb.

It’s a great side for pasta night, but it’s also hearty enough to serve as an appetizer with a bowl of warm marinara for dipping. The cast iron skillet gives the edges a wonderful golden crust while keeping the center soft and tender. It comes together with just one bowl and one pan, so cleanup is a breeze.
Helpful Tips
- Pat the tomatoes dry: Excess moisture from the cherry tomatoes can make the batter too wet, so blot them with a paper towel before folding them in.
- Warm the marinara before serving: A warm dipping sauce makes a big difference here, so heat it on the stove or in the microwave right before you’re ready to serve.
- Let it cool slightly before slicing: Give the skillet a few minutes to rest after baking so the cheese sets up and you get clean, sliceable pieces.
