That first crunch into this Garlic Bread Bruschetta piled high with juicy, basil-flecked tomatoes is pure summer in a single bite. It’s the appetizer that makes everyone hover around the kitchen waiting for the next batch.

The combination of sweet tomatoes, tangy balsamic, and salty Parmesan is bright and addictive, especially when piled onto warm, crisp bread. It’s an easy crowd-pleaser for parties, since you can toast the bread ahead and just top it right before serving. And because it comes together in under 20 minutes, it’s one of those go-to recipes you’ll reach for again and again.
Helpful Tips
- Use the ripest tomatoes you can find: The flavor of this bruschetta depends almost entirely on the tomatoes, so look for ones that are deeply red, fragrant, and slightly soft to the touch.
- Don’t skip toasting the bread: A good golden toast keeps the bread sturdy enough to hold the juicy topping without going soggy, so don’t pull it from the oven too early.
- Top just before serving: Add the tomato mixture to the bread right before you serve it, since letting it sit too long can make the bread lose its crunch.
