There’s something magical about baked brie. When warm and melty, this creamy cheese turns into the ultimate centerpiece for any appetizer spread. While most baked brie recipes lean sweet—with toppings like honey or jam—this Garlic Butter Baked Brie takes a savory twist that’s impossible to resist.

Rich, buttery, garlicky goodness meets molten brie in this simple yet elegant dish. We love making it for New Year’s Eve. It just feels like the right thing to be serving. It’s so luscious and enjoyable.
Helpful Tips
- No rind removal necessary: The rind helps the brie hold its shape as it melts. It’s completely edible and adds a nice texture.
- Customizable toppings: Add chopped nuts, caramelized onions, or herbs like rosemary or parsley for variety.
- Watch the time: Brie melts quickly, so keep an eye on it to avoid overbaking.
What Brie to Buy
- Wheel size: For our recipe, we use an 8-ounce wheel, but if you’re serving more than like 6-8 people, you might want to get a 12-ounce wheel.
- Double cream vs. triple cream: Double cream brie has a slightly firmer texture and is ideal for baking because it holds its shape better while still becoming gooey. Triple cream is richer and creamier but can be more challenging to handle when melted.
- Brands to consider: President, Marin French, or Trader Joe’s options are reliable and widely available.
