- 18 slices Italian or French baguette sliced 1/2” thick
- 1/4 cup olive oil
- Salt and black pepper to season
- 2 cups fresh grape or cherry tomatoes diced
- 1/4 cup parmesan cheese freshly grated
- 1/4 cup fresh basil chiffonade
- 2 cloves garlic minced
- salt and fresh ground pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
Preheat oven to 400˚ F(200˚C). Line a baking sheet with parchment paper.
Brush each of the slices of bread with olive oil. Season with salt and pepper. Place them on the baking sheet and toast for about 8 minutes, until golden. Remove from the oven.
Meanwhile, put the tomatoes in a mixing bowl with the cheese and basil. Stir. Taste and season with salt and pepper to your liking. Add the olive oil and balsamic vinegar. Stir to combine.
Load up each of the bread slices with the tomato mixture. Serve.
