Ingredients

  • 1 box Jiffy Corn Muffin Mix
  • 2 eggs
  • 8 ounce whole kernel corn drained
  • 1/4 cup mayonnaise
  • 1/4 teaspoon EACH salt and black pepper
  • oil for frying

For the dipping sauce:

  • 1/4 cup mayo
  • 2 tablespoons lime juice
  • 2 tablespoons Cotija or feta cheese crumbled
  • 2 tablespoons fresh cilantro finely chopped
  • 1/2 teaspoon chili powder

Instructions

  • Mix all the ingredients (except the oil) in a bowl and stir until well blended.
  • Preheat 1 inch of oil in a skillet until it reaches 350°F(175°C). Line a plate with paper towels.
  • Scoop a tablespoon of the mixture into the oil and fry for 1-2 minutes on each side or until golden brown.
  • Transfer to the plate to drain. Then transfer to a wire rack to cool.
  • In a jar, mix together the mayo, lime juice, Cotija, cilantro, and chili powder. Serve as a dipping sauce on the side.
