These Jiffy Corn Fritters are the ultimate quick-fix snack or appetizer, using just a handful of pantry staples to deliver serious crunch and flavor. Golden, crispy, and studded with sweet corn in every bite, these fritters go from skillet to plate faster than you can say seconds, please.

They’re endlessly versatile too, since you can serve them as an appetizer, a side dish, or even a fun breakfast alongside eggs and bacon. Whether you’re feeding a crowd or just want a fun twist on cornbread, this recipe delivers big flavor with minimal effort.
Helpful Tips
- Watch your oil temperature: Keep the oil steady at 350°F using a thermometer, since oil that’s too hot will burn the outside before the inside cooks through.
- Don’t overcrowd the pan: Fry the fritters in batches so they have room to cook evenly and stay crispy instead of steaming each other.
- Drain properly: Let the fritters rest on paper towels first to soak up excess oil, then move them to a wire rack so the bottoms stay crisp instead of getting soggy.
