Ingredients

  • 3 Roma tomatoes seeds removed, diced
  • 2 avocados diced
  • 1/3 cup red onion diced
  • 1 can black beans rinsed and drained
  • 1 can black eyed peas rinsed and drained
  • 1 can corn rinsed and drained
  • 1 small bell pepper diced (any color)
  • 1 jalapeño seeds removed, finely diced
  • 1/4 cup fresh cilantro chopped
  • Tortilla chips for serving

For the dressing:

  • 1/3 cup olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon EACH salt and black pepper
  • 1/4 teaspoon garlic powder

Instructions

  • In a bowl, combine the tomato, onion, black beans, black eyed peas, corn, bell pepper, jalapeno pepper, and cilantro. Toss to combine.
  • In a jar, mix together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder. Shake well to combine.
  • Pour dressing over the salad and toss to combine.
