- 3 Roma tomatoes seeds removed, diced
- 2 avocados diced
- 1/3 cup red onion diced
- 1 can black beans rinsed and drained
- 1 can black eyed peas rinsed and drained
- 1 can corn rinsed and drained
- 1 small bell pepper diced (any color)
- 1 jalapeño seeds removed, finely diced
- 1/4 cup fresh cilantro chopped
- Tortilla chips for serving
For the dressing:
- 1/3 cup olive oil
- 2 tablespoons fresh lime juice
- 2 tablespoons red wine vinegar
- 1 teaspoon granulated sugar
- 1/2 teaspoon EACH salt and black pepper
- 1/4 teaspoon garlic powder
In a bowl, combine the tomato, onion, black beans, black eyed peas, corn, bell pepper, jalapeno pepper, and cilantro. Toss to combine.
In a jar, mix together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder. Shake well to combine.
Pour dressing over the salad and toss to combine.
