These Loaded Smashed Potatoes are the kind of appetizer that disappears quickly. Baby potatoes are boiled until tender, smashed, and roasted until crispy around the edges. Then they’re topped with bacon, melted cheese, and fresh chives for that classic loaded potato flavor.

They’re great for game day snacks, party platters, or even as a fun side dish for dinner. The crispy edges and creamy centers make every bite satisfying, and the toppings add just the right amount of salty, cheesy flavor.
Helpful Tips
- Let the potatoes dry after boiling. Giving them about 10 minutes in the colander helps remove excess moisture so they crisp up better in the oven.
- Don’t smash them too thin. Press just enough to flatten the potatoes while keeping them in one piece so the centers stay soft.
- Flip halfway through roasting. Turning the potatoes helps both sides get golden and crispy.
