- 1 pound baby potatoes
- cooking oil
- salt and black pepper to season
- 2 slices bacon cooked and crumbled
- 1/2 cup cheddar cheese shredded
- fresh chives chopped
Preheat the oven to 425° F (220° C). Line a baking sheet with parchment paper.
Bring a pot of water to a boil and add the potatoes. Boil until tender, about 12-15 minutes.
Drain the potatoes and let them sit in the colander for 10 minutes.
Place them on the baking sheet and use a potato masher or bowl to smash each potato.
Drizzle well with cooking oil and salt and black pepper.
Roast in the oven until the potatoes are crispy and golden around the edges, about 25 minutes. Flip halfway so they cook evenly.
Remove from oven. Season with salt. Top with shredded cheese and crumbled bacon. Put them back in the oven for 3-5 minutes, until the cheese is melted. Garnish with fresh chives.
