Ingredients

  • 8 ounces (227 g) cellentani or macaroni noodles
  • 2 tablespoons (28 g) butter
  • 2 tablespoons (15 g) flour
  • 1 cup (237 ml) milk
  • 4 ounces (113 g) white cheddar grated
  • 4 ounces (113 g) fontina grated
  • Salt to taste
  • 5-7 drops green food coloring

Instructions

  • Bring a large pot of salted water to a boil. Cook the macaroni for 1 minute less than the package instructions so it’s al dente. Reserve 1/2 cup of the pasta water. Drain pasta into a colander and set aside.
  • In the same pot, melt the butter and add the flour. Stir until smooth and cook over low heat for 1 minute.
  • Add the milk and whisk until very smooth. Simmer for 1-2 minutes until slightly thickened.
  • Add the cheese and stir until melted and smooth. Add the food coloring until it reaches your desired color.
  • Stir in some of the pasta water if it is too thick.
  • Pour the pasta back into the pot and stir well to combine.
  • Serve with candy eyeballs.
