- 8 ounces cellentani or macaroni noodles
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 4 ounces white cheddar grated
- 4 ounces fontina grated
- Salt to taste
- 5-7 drops green food coloring
Bring a large pot of salted water to a boil. Cook the macaroni for 1 minute less than the package instructions so it’s al dente. Reserve 1/2 cup of the pasta water. Drain pasta into a colander and set aside.
In the same pot, melt the butter and add the flour. Stir until smooth and cook over low heat for 1 minute.
Add the milk and whisk until very smooth. Simmer for 1-2 minutes until slightly thickened.
Add the cheese and stir until melted and smooth. Add the food coloring until it reaches your desired color.
Stir in some of the pasta water if it is too thick.
Pour the pasta back into the pot and stir well to combine.
Serve with candy eyeballs.

- Using eyeball candy sprinkles really gets this mac and cheese into the Halloween spirit. You can also use sliced black olives or mozzarella balls with peppercorns to create edible monster eyes on top of the dish.
