Fiesta Chicken Casserole
Ingredients
- 1/2 cup sour cream
- 4 ounces cream cheese softened
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1 cup salsa
- 1 cup rotisserie chicken shredded
- 1 can sweet corn drained
- 1 can black beans rinsed and drained
- 6 ounces cheddar cheese
- 4 ounces medium shell pasta cooked
Instructions
- Preheat the oven to 350°F(175°C). Lightly grease an 8×8” casserole dish.
- Combine the sour cream, cream cheese, cumin powder, onion powder, garlic powder, salt, pepper and chili powder in a large bowl.
- Stir in the salsa until combined. Add the chicken, corn, beans and half of the cheese.
- Add the pasta and stir to combine.
- Pour the mixture into the prepared pan and even it out.
- Sprinkle on the remaining cheese and bake for 25-30 minutes or until the cheese is melted.
- Serve with additional salsa and sour cream on top.
