- 1/2 cup sour cream
- 4 ounces cream cheese softened
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1 cup salsa
- 1 cup rotisserie chicken shredded
- 1 can sweet corn drained
- 1 can black beans rinsed and drained
- 6 ounces cheddar cheese
- 4 ounces medium shell pasta cooked
Preheat the oven to 350°F(175°C). Lightly grease an 8x8” casserole dish.
Combine the sour cream, cream cheese, cumin powder, onion powder, garlic powder, salt, pepper and chili powder in a large bowl.
Stir in the salsa until combined. Add the chicken, corn, beans and half of the cheese.
Add the pasta and stir to combine.
Pour the mixture into the prepared pan and even it out.
Sprinkle on the remaining cheese and bake for 25-30 minutes or until the cheese is melted.
Serve with additional salsa and sour cream on top.
