Ingredients

  • 1/2 cup sour cream
  • 4 ounces cream cheese softened
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1 cup salsa
  • 1 cup rotisserie chicken shredded
  • 1 can sweet corn drained
  • 1 can black beans rinsed and drained
  • 6 ounces cheddar cheese
  • 4 ounces medium shell pasta cooked

Instructions

  • Preheat the oven to 350°F(175°C). Lightly grease an 8x8” casserole dish.
  • Combine the sour cream, cream cheese, cumin powder, onion powder, garlic powder, salt, pepper and chili powder in a large bowl.
  • Stir in the salsa until combined. Add the chicken, corn, beans and half of the cheese.
  • Add the pasta and stir to combine.
  • Pour the mixture into the prepared pan and even it out.
  • Sprinkle on the remaining cheese and bake for 25-30 minutes or until the cheese is melted.
  • Serve with additional salsa and sour cream on top.
