Red, White & Blue Popsicles
Ingredients
For the red layer:
- 1 1/2 cups strawberries hulled
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
For the white layer:
- 1 cup full-fat coconut milk
- 1 to 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
For the blue layer:
- 1 1/2 cups blueberries
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
Instructions
- Blend the strawberries with honey and lemon juice until completely smooth. Divide evenly among popsicle molds, filling each about one-third full. Freeze for 45 to 60 minutes, or until firm.
- In a bowl, whisk together coconut milk, honey, and vanilla until smooth. Spoon over the frozen strawberry layer, filling another third of each mold. Freeze again until firm, about 45 to 60 minutes.
- Blend the blueberries with honey and lemon juice until smooth. Spoon over the coconut layer, filling molds to the top.
- Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
- To remove, run the molds under warm water for a few seconds and gently pull the popsicles out.
- Store in an airtight container in the freezer until ready to serve.
