Red, White & Blue Popsicles

When it’s hot outside and you want something festive without turning on the oven, these Red, White and Blue Popsicles are the move.

Ingredients

For the red layer:

  • 1 1/2 cups strawberries hulled
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

For the white layer:

  • 1 cup full-fat coconut milk
  • 1 to 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract

For the blue layer:

  • 1 1/2 cups blueberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

Instructions

  • Blend the strawberries with honey and lemon juice until completely smooth. Divide evenly among popsicle molds, filling each about one-third full. Freeze for 45 to 60 minutes, or until firm.
  • In a bowl, whisk together coconut milk, honey, and vanilla until smooth. Spoon over the frozen strawberry layer, filling another third of each mold. Freeze again until firm, about 45 to 60 minutes.
  • Blend the blueberries with honey and lemon juice until smooth. Spoon over the coconut layer, filling molds to the top.
  • Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  • To remove, run the molds under warm water for a few seconds and gently pull the popsicles out.
  • Store in an airtight container in the freezer until ready to serve.
