Red, White & Blue Popsicles

For the red layer:
- 1 1/2 cups strawberries hulled
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
For the white layer:
- 1 cup full-fat coconut milk
- 1 to 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
For the blue layer:
- 1 1/2 cups blueberries
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
Blend the strawberries with honey and lemon juice until completely smooth. Divide evenly among popsicle molds, filling each about one-third full. Freeze for 45 to 60 minutes, or until firm.
In a bowl, whisk together coconut milk, honey, and vanilla until smooth. Spoon over the frozen strawberry layer, filling another third of each mold. Freeze again until firm, about 45 to 60 minutes.
Blend the blueberries with honey and lemon juice until smooth. Spoon over the coconut layer, filling molds to the top.
Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
To remove, run the molds under warm water for a few seconds and gently pull the popsicles out.
Store in an airtight container in the freezer until ready to serve.
