Charred cabbage might not sound exciting at first, but once you try these Charred Miso Butter Cabbage Wedges, you’ll see why it’s worth making. Roasting brings out the cabbage’s natural sweetness, while miso butter adds a rich, savory flavor that makes every bite interesting.

Charred miso butter wedges

This is an easy side dish that feels a little different from the usual roasted vegetables. The edges get lightly crisp and caramelized in the oven, and the toasted panko breadcrumbs add just the right crunch on top. It’s simple enough for a weeknight dinner but flavorful enough to serve when you want something a bit special.

Helpful Tips

  • Cut the wedges through the core. This helps the cabbage hold together while roasting so the wedges don’t fall apart.
  • Don’t skip the char. Let the edges get lightly browned in the oven. That caramelization adds a lot of flavor.
  • Toast the breadcrumbs slowly. Keep stirring so they turn evenly golden and don’t burn.

Ingredients

  • 4 tablespoons butter softened, divided
  • 1 tablespoon miso paste
  • 1 cabbage sweetheart, hispi. or green cabbage
  • 1/3 cup Panko breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1 tablespoon parsley chopped

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the cabbage into 6 wedges.
  • Mix 3 tablespoons of the softened butter with the miso paste and brush it all over the cabbage wedges. Reserve about a tablespoon of the mixture to brush on at the end. Place the cabbage wedges on the baking sheet and roast for 30-35 minutes, until lightly charred on the outside.

  • When the cabbage is done, brush the remaining butter mixture over the wedges.
  • Sprinkle on the breadcrumbs and chopped parsley.
