Brookies are the best thing to happen to dessert in a long time. They’re a rich and chocolatey part-brownie part-cookie in a single super-noshable dessert.

If you’ve not tried one of these yet, put everything down and get to the kitchen. I promise this is a super simple recipe and you won’t be able to contain yourself as their baking (or maybe that’s just me!). Before they were even out of the oven I was ready to pounce.
I mean, who doesn’t love a brownie and better yet, a hot-out-of-the-oven chocolate chip cookie. Now imagine a marriage between the two. Equal parts rich chocolate cakey brownie and buttery chewy cookie, rolled into one.
Love brownies? Make some extra batter and try these easy brownie ice cream sandwiches for the perfect summer treat. We also love these raspberry white chocolate blondies when we’re craving something chewy.
Okay, I think I’ve done enough convincing, especially since these brookies require none. Let’s get to the recipe!
What You’ll Need to Make Brookies
To make this recipe super easy, we’ve used prepared cookie dough and boxed brownie mix. You can use which ever brands you prefer. We use Pillsbury Chocolate Chip Cookie Dough and Ghirardelli Double Chocolate Brownie Mix. Or you can make your own with your favorite recipes. Here’s our recipe for homemade chocolate chip cookies.
Brookies can be made with just cookie dough and brownies, but we punch ours up a notch by adding a mix of Oreo cookies and Reese’s Peanut Butter Cups. If you prefer, you can use all Oreos or all Reese’s Peanut Butter Cups. We do half and half for a little variety. You can also leave these out entire to cut down on calories.

How to Make Brookies
Preheat oven to 350° F and lightly grease a cupcake pan.
Divide the cookie dough into 12 balls. Put one ball of cookie dough in each cupcake well. Push down to flatten.
Add the peanut butter cups to half and the Oreo cookies to the other half.
Mix up brownie batter per package instructions using eggs, oil and water. Fill each cupcake well with enough brownie batter to fill 90% full.
Bake for 22 minutes, or until the top of the brownies are no longer wet.
It really is that simple! Grab a glass of milk and enjoy.
Pro Tips for Making Brookies
Brookies, a delightful combination of brownies and cookies, are the perfect treat for those who love both desserts. Here are some pro tips to help you create the ultimate brookies:
- Use quality ingredients: As with any baked good, using high-quality ingredients will yield the best results. Choose fresh butter, high-quality chocolate or cocoa powder, and pure vanilla extract to enhance the flavor of your brookies.
- Pre-make the batters: Prepare the brownie and cookie batters separately before combining them. This will help you achieve the distinct textures of each dessert in a single treat.
- Layer or swirl the batters: For a visually appealing brookie, you can either layer the batters or swirl them together. To create a layered brookie, spread the brownie batter in the pan first, then drop spoonfuls of cookie dough on top. For a swirled brookie, drop spoonfuls of both batters into the pan and gently swirl them together with a knife or skewer.
- Chill the cookie dough: If you find that the cookie dough is too soft or difficult to handle, refrigerate it for about 30 minutes before assembling the brookies. This will make the dough easier to work with and help it maintain its shape during baking.
- Use parchment paper: Line your baking pan with parchment paper, leaving an overhang on the sides. This will make it easier to lift the brookies out of the pan after they have cooled, ensuring clean cuts and easy removal.
- Don’t overmix the batters: Overmixing the batters can result in a tough or dense texture. Mix each batter just until the ingredients are combined, being careful not to overwork the dough.
- Monitor the baking time: Keep an eye on the brookies as they bake, since the cooking time can vary depending on the thickness of the layers and the type of pan used. Start checking for doneness a few minutes before the suggested baking time is up.

Oreos and Reese’s?? This sounds dangerously good! I love how simple they are to make too!
I am planning to make your Brookie’s tomorrow.
Question, Is there enough room to put in the oreo cookie AND Reese’s cup along with the bottom chocolate chip cookie and brownie mix? Thank you.
