  • Boil salted water in a pot. Add the macaroni and cook according to the package instruction to al dente, then drain.
  • Add oil to a skillet over medium heat. Once hot, add the onions and cook for 3 minutes, until softened.
  • Add the garlic and sauté for just 30 seconds, until aromatic.
  • Add the spaghetti sauce, Italian seasoning, and salt.
  • Simmer for 5 minutes, stirring occasionally. Add 1 cup of the mozzarella and the drained macaroni. Stir to combine.
  • Add spoonfuls of the ricotta over the top, don’t stir it in. Top with the remaining mozzarella.
  • Heat on medium low until the cheese is melted. You can either serve it in a dip bowl, or transfer it to a food-safe Halloween skull.
  • Serve with bread, crostini, or breadsticks.
