Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic minced
  • Freshly ground black pepper
  • 1 pound cremini mushrooms sliced 1/2″ thick
  • Freshly chopped parsley for garnish

Instructions

  • In a large bowl, whisk together balsamic vinegar, soy sauce, garlic, and pepper. Add mushrooms and marinate for 20 minutes.
  • Thread the mushroom onto skewers. If using wooden skewers, presoak them in water for 20 minutes before using. I prefer metal skewers so they don’t burn.
  • Heat grill to medium-high. Grill mushrooms for 2 to 3 minutes per side, basting a few times with the marinade.
  • Garnish with parsley before serving.
