Grilled Balsamic Marinated Mushrooms

- 1/4 cup balsamic vinegar
- 2 tablespoons low-sodium soy sauce
- 2 cloves garlic minced
- Freshly ground black pepper
- 1 pound cremini mushrooms sliced 1/2" thick
- Freshly chopped parsley for garnish
In a large bowl, whisk together balsamic vinegar, soy sauce, garlic, and pepper. Add mushrooms and marinate for 20 minutes.
Thread the mushroom onto skewers. If using wooden skewers, presoak them in water for 20 minutes before using. I prefer metal skewers so they don’t burn.
Heat grill to medium-high. Grill mushrooms for 2 to 3 minutes per side, basting a few times with the marinade.
Garnish with parsley before serving.
