Ingredients

  • 1 mini seedless watermelon
  • 1/4 cup (4 g) cilantro chopped
  • 1 jalapeno chopped (seeds removed for less heat)
  • 1 lime juiced and zested
  • 3 tablespoons (30 ml) extra-virgin olive oil
  • 2 teaspoons (10 ml) honey
  • Maldon flake salt
  • Red chili flakes optional

Instructions

  • Slice the watermelon into 1” slices. Cut each slice into 6 wedges.
  • In a small bowl, mix together the cilantro, jalapeno, lime juice and zest, olive oil, and honey.
  • Lay the wedges out on a platter. Spoon the dressing over the top. Finish with flake salt and chili flakes. Serve immediately.

Notes

  • If not serving right away, serve the dressing on the side of the watermelon so it can be put on right before eating.
