- 1 mini seedless watermelon
- 1/4 cup cilantro chopped
- 1 jalapeno chopped (seeds removed for less heat)
- 1 lime juiced and zested
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons honey
- Maldon flake salt
- Red chili flakes optional
Slice the watermelon into 1” slices. Cut each slice into 6 wedges.
In a small bowl, mix together the cilantro, jalapeno, lime juice and zest, olive oil, and honey.
Lay the wedges out on a platter. Spoon the dressing over the top. Finish with flake salt and chili flakes. Serve immediately.
- If not serving right away, serve the dressing on the side of the watermelon so it can be put on right before eating.
