Thai peanut chicken

The coconut milk and peanut butter create a luscious, creamy sauce that coats every piece of chicken beautifully, while the ginger and garlic add warmth and depth. Adding the cilantro and lime juice near the end of cooking keeps those bright, fresh flavors from fading during the long cook time. It’s a wonderful weeknight dinner since you can set it in the morning and come home to a meal that’s ready to eat.

Helpful Tips

  • Whisk the sauce until smooth: Take a minute to fully combine the coconut milk and peanut butter before adding the chicken, so you avoid any clumps in the finished sauce.
  • Add the lime juice and cilantro near the end: Stirring these in during the last hour of cooking keeps their fresh, bright flavor from cooking away.
  • Toast your peanuts for garnish: A quick toast in a dry skillet brings out extra flavor and crunch in the peanuts you sprinkle on top.
