Ingredients

  • 1 cup coconut milk
  • 1/2 cup natural peanut butter smooth or crunchy
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound chicken breasts cubed boneless skinless, cut in 1-inch pieces
  • 1 red bell pepper sliced
  • 1/2 cup cilantro chopped, divided
  • 3 tablespoons lime juice
  • 1/4 cup dry-roasted peanuts chopped, for garnish
  • 2 cups steamed white rice for serving

Instructions

  • In the slow cooker, combine the coconut milk, peanut butter, soy sauce, honey, garlic, ginger, salt, and ground black pepper. Whisk to make a smooth sauce.
  • Add the chicken and bell pepper to the slow cooker and press them down into the sauce.
  • Cover and cook on HIGH for 2-3 hours or on LOW for 4-5 hours.
  • About an hour before serving, stir in 1/2 of the chopped cilantro and the lime juice. Cover and continue cooking for the remaining time.
  • Serve over rice. Garnish with remaining cilantro and chopped dry-roasted peanuts.
