- Corn to use – You can use corn on the cob or canned corn for this recipe, its up to you. To make it a quick and easy recipe we are using canned corn. You can also char the corn to add a smoky flavor if you want.
- Choose the Right Cheese – Traditional elote uses cotija cheese, which has a salty, crumbly texture. If you can’t find cotija, feta or grated Parmesan makes a great substitute.
- Adjust the Spice to Your Taste – Some like it mild, and some like it fiery! You can leave the seeds and ribs out of the jalapenos to your spice preference.

Easy Mexican Street Corn Cups
Ingredients
- 2 cans corn or 4 ears of corn on the cob
- 1/2 cup (112 g) mayonnaise
- Juice from 1 lime plus zest of that lime
- 4 green onions chopped
- 2 jalapeno diced
- 1/2 teaspoon (1 g) chili powder mild to hot
- 1/4 teaspoon (1 g) salt
- 1/2 cup (75 g) Cotija cheese
- 1/2 cup (8 g) cilantro chopped
- 1 lime cut into wedges
- Tajin
Instructions
- Combine the corn, mayonnaise, lime juice, lime zest, green onions, jalapeno, chili powder, and salt in a bowl.
- Refrigerate until chilled.
- Garnish with Cotija cheese, cilantro, lime wedges, and Tajin. Serve cold.
