Ingredients

  • 1 1/2 pounds (680 g) asparagus woody ends removed
  • 1 tablespoon (15 ml) olive oil
  • salt and pepper to taste

For the dressing:

  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1 lemon juiced and zested
  • 1/4 cup (38 g) feta crumbled
  • 1 clove garlic minced
  • 1 tablespoon (15 ml) Dijon mustard
  • 1/2 teaspoon (1 g) dried oregano

Instructions

  • Toss the asparagus spears in the oil, salt and pepper and grill over medium-high heat until tender-crisp and slightly charred, about 4 minutes.
  • In a bowl or jar, mix together the dressing ingredients. Shake well to emulsify.
  • Serve the asparagus with the dressing poured over.
  • You might wish to add extra feta cheese and lemon zest as garnish.
