Ingredients

  • 10 ounces spring mix salad
  • 2/3 cup pecans chopped
  • 2/3 cup craisins
  • 1/2 cup goat cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoon apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Place a small round bowl into the center of a larger round bowl. It will look like a wreath once assembled. Arrange the spring mix around the outside of the bowl. Add the pecans, pomegranate seeds and goat cheese on top.
  • Mix together the olive oil, apple cider vinegar, Dijon, honey, salt and pepper.
  • Pour the salad dressing into the small bowl in the center.
