- 10 ounces spring mix salad
- 2/3 cup pecans chopped
- 2/3 cup craisins
- 1/2 cup goat cheese crumbled
- 3 tablespoons olive oil
- 2 tablespoon apple cider vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons honey optional
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Place a small round bowl into the center of a larger round bowl. It will look like a wreath once assembled. Arrange the spring mix around the outside of the bowl. Add the pecans, pomegranate seeds and goat cheese on top.
Mix together the olive oil, apple cider vinegar, Dijon, honey, salt and pepper.
Pour the salad dressing into the small bowl in the center.
