Choriqueso is the kind of appetizer that grabs attention the second it hits the table. It is loaded with browned chorizo and melted cheese, served bubbling hot and ready for tortilla chips. If you are putting together a snack spread for game day or a casual get together, this is the dip everyone hovers around.

Helpful Tips
- Brown the chorizo fully before adding cheese so you get crispy bits and deep flavor throughout the dip.
- Use a good melting cheese like Oaxaca, Monterey Jack, or a combination for the smoothest texture.
- Serve immediately or keep it warm in a small slow cooker so the cheese stays perfectly scoopable.
